Cucumber Labneh Crackers with Avocado and Orange
Once you start thinking about yogurt-for-breakfast in new, creative ways, morning meal options widen. Here we go savory, slathering a thick layer of labneh over whole grain crackers (or matzoh) and topping things off with cucumber. Don't have labneh? Mix a bit of plain Greek yogurt with a touch of salt. So long as you eat it right away, the extra moisture shouldn't dampen your cracker's crunch.
To make: Top your favorite whole grain cracker (I like both Akmak and Wasa) with labneh or salted Greek yogurt. Top with cucumber rounds. Sprinkle with chia seeds, poppy seeds, or nigella seeds. Serve with segmented orange and thinly sliced avocado.
